This is a beautiful looking salad and oh so healthy!
- 1/2 cup Feta cheese
- 1 (6 oz ) container spring mix greens
- 1 tomato, diced
- 1 bottle Greek vinaigrette
- 1 cucumber, peeled and sliced
- 1 head romaine lettuce, chopped
- 1/4 red onion, thinly sliced
- 1/2 jar pepperoncini peppers
- 1/2 ( 11 oz ) jar roasted red peppers, sliced
- 1 jar Kalamata olives, pitted
- Put spring mix greens and sliced romaine lettuce in bowl and mix together.
- Top with: sliced roasted red peppers, thin sliced red onions, Kalamata olives, pepperoncini peppers, diced fresh tomatoes and peeled and thinly sliced cucumber.
- Sprinkle with Feta cheese.
- Top with a Greek vinaigrette.
